Make the Dough

Preheat oven to 425℉ (220℃). Combine – Add the baking mix to a large bowl (or whisk all-purpose flour, baking powder, and salt), and cut in the shortening until it resembles coarse crumbs. (Photo 1) Mix the lemon-lime soda with the sour cream. Make a well in the biscuit mixture and pour in the sour cream mixture. Mix until it holds together and becomes sticky, being careful not to overmix the dough to avoid tough biscuits. (Photos 2-3)

Bake the Biscuits

Make Biscuits – Turn the dough out onto a lightly floured work surface. Pat the dough gently out to about an inch thick. Cut out the biscuits with a biscuit cutter or a floured glass. Push straight down without twisting to ensure biscuits rise properly. (Photo 4) Butter – Pour most of the melted butter into a 9×13-inch baking dish, brushing to coat the baking dish evenly. Place the biscuits in the baking dish and brush them with the remaining melted butter. (Photo 5) Bake for 10-12 minutes or until golden brown. Make-Ahead and Storage Instructions

These 7UP biscuits freeze beautifully, allowing you to prepare them up to three months ahead. And you can freeze them either cooked or raw. To fast freeze, place them on a baking sheet until solid. Then, transfer them to a freezer ziplock bag, squeezing out as much air as possible before closing. If freezing raw biscuits, you can bake them directly from the freezer without thawing. Just keep in mind they’ll need a bit more time to cook. Store any leftover biscuits in an airtight bag in the fridge for 2-3 days. To enjoy them warm, reheat them in the oven, toaster oven, or microwave.
