Meatless menu for Thanksgiving and Christmas dinner
Make a simple yet delicious meal platter this Thanksgiving and Christmas. We have baked tofu with crispy crust as a main dish, an excellent vegetarian and vegan substitute for turkey or ham. We have mashed potatoes, roasted vegetables, and maple or honey-glazed carrots for side dishes and appetizers. Follow the sequence in the video to optimize the cooking time. The meal is ready in less than 2 hours 30 minutes. This recipe easily serves a family of 6.
First, rub the tofu and put it in the oven. Meanwhile, boil the potatoes and carrots. Cut the vegetables and roast once the tofu is out of the oven or you can bake tofu and vegetables at same time. Prepare the crust for tofu, optional, and bake. Meanwhile, make the garlic butter. Drain the potatoes and carrots. Make the mashed potatoes with garlic butter. Once done, make the maple or honey-glazed roasted carrots. Arrange everything in a baking tray and bake for 10 minutes. Serve as it is or with gravy of your choice, and enjoy.

Ingredients
Baked tofu, a main vegetarian dish:
You will need 3 blocks of tofu, oil, salt, and Italian seasoning. Mayo, black pepper, and bread crumbs with Italian seasoning are used for a crispy crust.
Side dishes
Roasted vegetables: zucchini, onions, and broccoli. You can even use potatoes, sweet potatoes, Brussels sprouts, etc. Garlic mashed potatoes: potato, pepper, salt, and fresh herbs. Glazed carrots: carrot, pepper, honey, and dill leaves. Garlic butter: Garlic cloves and butter. Check out the recipe card for the full list of the ingredients.
Step-by-step instructions
Vegan Turkey (Baked Tofu)
In a plate or cutting board, place 3 tofu blocks and drizzle oil, sprinkle salt and Italian seasoning and rub it on all sides. Bake at 400 degrees F (200 degrees C) for 15 minutes. After 15 minutes of baking, flip the tofu and bake for another 10 to 15 minutes. Transfer it to the wire rack and let it cool completely.
To make the crispy crust
Add mayo, salt, pepper, Italian seasoning, bread crumbs, and oil to a bowl and mix well for a crisp crust. Divide this mixture into three portions and spread it on tofu blocks. Bake this for 10 to 12 minutes at a preheated 400-degree oven.
Other preparations meanwhile
Boil the potatoes in salted boiling water. After 5 minutes, add peeled carrots. Once they are cooked, drain and keep it aside. Separate the carrots, chop them into cubes, and keep them aside.
Roasted vegetables
Add broccoli, onion, zucchini, oil, salt, paprika, and curry powder in a mixing bowl and toss well until combined. Add this to the baking tray and bake for about 15 to 20 minutes at 400 degrees F or 200 degrees C. At this point, the vegetables will be crisp and partially baked.
Garlic butter
In a blender, add garlic cloves and blend for 5 seconds. Add butter and blend for a few seconds. Keep this aside.
Garlic mashed potatoes
In a bowl, add boiled potatoes, salt, pepper powder, fresh herbs, and 6 tablespoon garlic powder, and mash them using a masher to get the desired consistency.
For the glazed carrots
In a pan, add 2 tablespoon oil and 2 tablespoon garlic butter. Add the chopped carrots and saute for 2 minutes. Add pepper powder and honey and saute it for 1 to 2 minutes. Add dill leaves, mix well, and switch off the flame.
Complete meal
On a greased baking pan, spread the mashed potatoes on one side and the partially roasted veggies on the other. Place the three roasted tofu blocks on top of this. Add honey-glazed carrots. Bake this for about 10 to 12 minutes at preheated 200 degrees C or 400 degrees F oven. The Holiday Meal is ready. Serve and enjoy.
Tips
You can add 2 tablespoon of cream or Greek yogurt to make mashed potatoes creamy. Check out the video for plating ideas, and serve with your favorite gravy if desired. You can cut each tofu blocks into 4 to 6 slices while serving. You can even bake the tofu and vegetables together if you have two big trays in your oven. Feel free to use vegetables like potatoes, sweet potatoes, Brussel sprouts, etc.
