Air Fryer Mexican Chicken Ingredients Notes
Chicken – We’re using about 4 breasts for this recipe Black beans – These are the type in a tin that are already cooked, and they need to be drained and rinsed well Veggies – I used onion and red peppers but you can swap in whatever you prefer Fajita seasoning – Ideally use one that just has spices. Check the ingredients and choose one that doesn’t include ‘filler’ ingredients like salt or flour
In the freezer This is fine to freeze. Wait until cooled then portion up and freeze. Defrost thoroughly before reheating. The one in these photos is a Russell Hobbs XXL one.

I’ve tested 3 air fryers now, and while I’m not saying that this one is THE BEST EVER, I’m really happy with it. It’s easy to fit in the dishwasher, not too expensive and has a basket large enough for 4 people. I cook this in my air fryer for 20 – 25 minutes, but the exact number of minutes it takes will depend on your machine, the size of your chicken chunks and whether you’re using breast or thigh meat.
