The word “galette” means flat cake in Norman. It is essentially a free-form pie filled with sweet or savory fillings. The crust can be made from pie dough, puff pastry, or a crepe (a Breton galette). I love to use my flaky pie crust recipe to make this apple galette. The buttery and flaky pastry creates the perfect base for the sweet, tart, and lightly spiced apple filling in just half the time. Ingredients for this apple galette recipe
Apples—I love the tart taste of granny smith apples in my galette. If you prefer, you can use McIntosh or Pink Lady apples for a similar tart flavor. You can also mix it up and combine sweet and sour apples by adding gala or golden delicious apples. Pie Dough—I use my flaky pie crust recipe to create my base, but you can also use a premade crust, like Pillsbury or Marie Callender’s, to save time and effort. Brown Sugar - I like to use dark brown sugar for this recipe as its toffee notes pair perfectly with granny smith apples. Spices - A combination of cinnamon and salt helps balance the sweet and sour notes of the filling. Vinegar—This helps prevent the apples from oxidizing. You can also use the juice of one lemon instead. Egg—A whisked egg is not essential but creates a beautiful glaze for the galette’s crust.

Substitutions & variations
Make it without cooking the filling—Traditional apple galettes are made without a pre-cooked filling. To save 15-20 minutes, add the apples to your pastry with sugar, salt, cinnamon, vinegar, and cornstarch. Use puff pastry—Puff pastry can be used as a base for an even quicker version of this apple galette recipe. Finish the crust - Sprinkle some coarse sugar after you baste the crust with the egg wash for an elegant finish. Use lemons - Go the traditional route and swap out the vinegar for lemon juice. Change the filling - Use seasonal fruits and vegetables and make sweet and savory galettes year-long. Add more flavor - Try a more complex spice blend by adding nutmeg and ginger powder to your filling.
