This rice recipe is family friendly. It is not only quick and easy to make but also customizable. Feel free to add your favorite mix-ins. This rice recipe can be served alone or as a side dish the way it is below for your vegan or vegetarian meatless dinner. Meat eaters can serve with poached eggs or chicken or any other favorite meat if desired. Fried rice recipe is also one of the best one pot or one pan or sheet pan vegetarian meal that I have tried so far. If you have not planned your holiday (Christmas or thanksgiving) or Easter or Game night dinner menu yet, make sure you add this rice dish. It is going to be a crowd pleaser.

Some of the common ingredients used to make fried rice includes long grain rice, oil, veggies like carrots, bell pepper (capsicum), frozen peas, corn, cabbage, and sauces like soy, Worcestershire sauce, vinegar, and hot sauce.

In India, rice is served as an entrée or main dish for lunch and/or dinner along with some gravy, curry, or masala. In western countries, fried rice is served as a side with egg rolls, dumplings with any meat or seafood, chicken wings, roasted Brussel sprouts, etc.

Ingredients

2 cups Basmati rice / any long grain rice 3 tablespoon Cooking oil 1 tablespoon Crushed garlic ⅓ cup Green beans chopped ⅓ cup Green peas ⅓ cup Sweet corn 2 Carrots finely chopped ¼ cup Spring onions / Green onions chopped 8 florets Broccoli 3 cups Water (broth of your choice can be used instead) 1 Bouilion / Maggi cube optional 1 tablespoon Soy sauce 1 tablespoon Worcestershire sauce 1 tablespoon vinegar 2 tablespoon Hot sauce of your choice 4 tablespoon Tomato ketchup or sauce Salt, to taste

How to make homemade baked fried rice from scratch?

To cook or bake the rice in the oven,

Add rice in large baking dish or casserole. Drizzle cooking oil and toss so that every single grain of rice is coated in oil. Add garlic along with veggies of your choice. Some veggies that you can add to fried rice include sweet corn, green peas, bell pepper or capsicum, cabbage, beans, carrots, mushrooms, baby corn, etc. Make sure all the veggies are chopped finely so that it gets cooked along with rice quickly. In a pan over high heat, bring water along with bouillon or broth, soy sauce, Worcestershire sauce, vinegar, hot sauce, and ketchup to a boil. Pour on top of rice and stir it. Cover the casserole or dish with lid or aluminum foil.

Bake this in preheated oven for 30 to 35 minutes. Remove the lid or foil and let it stand for 10 minutes. Now fluff the rice using a fork, taste and adjust with salt and seasoning accordingly. You are free to serve at this point. To get those cripsy rice bits like the one served in restaurants, please continue with the next step. Increase the oven temperature to 475 degree F and cook for another 10 minutes until the rice is browned on top OR put the oven under broiler mode and place the cooked rice for few minutes to brown the top.

The best way to reheat fried rice is to add moisture before reheating it. You can sprinkle water or broth or some oil and toss. This is done to prevent it from drying out. You can reheat leftover rice in stovetop, oven or microwave. To reheat leftover rice in microwave : add rice in microwave safe bowl, sprinkle water, around tablespoon per cup of rice, and toss. Cover with lid and microwave for 20 to 30 seconds till its hot.

To reheat leftover rice on stovetop : add rice in wok or pan. sprinkle water or broth or oil and stir it. Cover with the lid and heat on medium flame till its heated through. Stir occasionally to prevent it from sticking at the bottom. To reheat leftover rice in oven : Combine the rice along with some water in oven safe dish. Preheat the oven to 300 degree F. Using fork break up any large clumps of rice. Cover the top with aluminum foil or lid. Heat for about 15 to 20 minutes or until it is heated through.

Any leftover rice can be stored in air tight container in refrigerator and reheated using any given method above. Depending on the texture, how well its stored and whether white rice or brown rice is used, fried rice will last for 2 to 5 days.
