Love bananas but plantains-starchy cousin to bananas don’t strike you as exciting? Au contraire; you need to widen your plantain horizons .
If you are iffy on the plantain family, these baked plantains fill with cheese (Plantanos Asados con queso) and top with guacamole have the power to convince you to join the team of these amazing starchy vegetable.

 How about a tiny bit? I promise you do not have to do a whole lot-with minimal effort you will get hook.  Grab some plantains at your supermarket- not available? Check any Latino supermarket . They must be really ripe like, this one here. Oh, don’t forget to pick up some cheese and guacamole or  ripe avocados.

Preheat the oven to 400°F. Line baking sheets with foil and coat with cooking spray or oil  Using a sharp knife cut both ends off the plantain. This will make it easy to grab the skin of the plantains. Slit a shallow line down the long seam of the plantain; peel only as deep as the peel. Remove plantain peel by pulling back.

Place plantains on tray and lightly spray, bake for a about  25 minutes , turn and bake on the other side for another 15 minutes or  more until golden brown and tender , depending on the plantain.

Remove baked plantains from oven cool for a couple of minutes; make a horizontal slit in the plantains, stuff with cheese

Place back in the oven for a couple of minutes until cheese melts. Remove and serve immediately.   Not into process food, want a cave man’s diet (paleo) or you are on a vegan lifestyle no worries- stuffed with guacamole or plain avocado – that ‘s how we roll here.     Want over the top experience, the ULTIMATE way  – fill with cheese and then top with guacamole and you will never look at plantains the same way.
