We all have long, unforgiving work days that leave us wanting to avoid the kitchen. Whenever I have one of those days, all I want is effortless and comforting food. And these beef tips are at the top of my list for those days.  Accessible and inexpensive ingredients are another reason beef tips served over steaming hot rice is my go-to recipe. We can sit down to dinner in less than an hour, making it a family favorite as well. But enough talking; try this recipe for yourself to experience how deliciously convenient it can be.😉 While some argue that stew meat is not beef tips because stew meat is tougher, I use either. Sirloin tips do cook faster. But if you want to let it simmer all day in a crock pot, stew meat is the way to go.

How to Make Beef Tips and Rice

Heat the olive oil and butter in a large Dutch oven or heavy-bottomed pot over medium-high heat. Season the beef with salt, pepper, and Creole seasoning (if using). Add stew meat and sear until browned on all sides, about two minutes per side. (Photos 1-3) Saute Aromatics – Add the onion and cook until softened, 7-8 minutes. Then add your garlic and thyme and cook for another minute. (Photos 4-5) Deglaze with white wine and let it cook down for about a minute.

The Gravy – Add the beef broth, bouillon powder, and Worcestershire sauce. Bring it to a boil, reduce heat to low, then simmer for 30-40 minutes or until the meat is tender. (Photo 6) Thickener – In a small bowl, whisk together the flour and water. Add the flour mixture to the pot, then continue stirring and simmering until the sauce thickens (about two minutes). Adjust the consistency with water or broth and the seasoning to taste. (Photos 7-8) Serve over beef tips and gravy with rice, and enjoy! 😉
