Apple cake loaf
Our Fall is complete with baking this delicious loaf of moist apple cinnamon bread made using seasonal fresh apples. This apple bread is not only easy to make but also moist and addictive. When the bread is in the oven, the smell of baked cinnamon with apples makes it heavenly—one of the best ways to celebrate Fall and Thanksgiving. The best part about this apple bread is that you can serve it for breakfast, a mid-day snack, or a cozy fall dessert. Ingredients
Apples: Any apple that holds its shape when baked works fine for this apple coffee bread, such as fuji, gala, granny smith, or Macintosh. Use fresh seasonal apples with brown sugar and cinnamon for the apple mixture. For the crispy crumb texture, you need brown sugar, flour, and cinnamon. To make moist bread: Use butter, sugar, eggs, vanilla extract, milk as wet ingredients and flour, salt and baking powder as dry ingredients. Check out the recipe card for the full list of the ingredients.
Step-by-step instructions
Preheat the oven to 350 degrees F (180 degrees C). Grease or line the loaf pan with parchment paper and set it aside.Using an electric hand-held mixer, cream together the butter, sugar, eggs, and vanilla extract in a bowl until well incorporated. Add the milk and whisk until combined.Add flour, salt, and baking powder and whisk. Scrape the side of the bowl using a spatula and mix to form a smooth batter.
Add apple, brown sugar, and cinnamon in a bowl and mix well. Keep this aside. Add sugar, flour, and cinnamon in another bowl and mix well. Pour half of the prepared batter into the loaf pan. Spread evenly.
Now spread half of the apple mixture evenly. Spread the remaining batter and evenly spread the remaining apple mixture. Finally, top it with a sugar-flour mixture. Bake in the preheated oven for 35-35 minutes or until the toothpick inserted comes out clean.
Let it cool completely on a wire rack.Drizzle some sugar glaze. Slice and serve. Enjoy with a cup of hot tea or coffee.
Tips
Once it is done baking, let the bread sit in the loaf pan for 10-15 minutes before removing it and letting it cool completely. I highly recommend using parchment paper for easy removal of quick bread from a loaf pan. Any leftovers can be stored at room temperature for 3 days and in the refrigerator for up to 1 week. You can freeze this apple bread for three months. For the glaze, combine 1 cup powdered sugar with 1 tablespoon milk and ½ teaspoon vanilla extract or 1 tablespoon maple syrup.
