One of the best recipes to try during winter or monsoon seasons. This detox soup packed with immune-boosting ingredients or veggies is also good if you are on a weight loss journey, improves digestion and general immunity. Having said that, even kids will love this soup. Feel free to add any veggies they like to make it more attractive for them. I have given a list of veggies below that go well this soup. Clear soup is usually a simple soup recipe made with veggies like beans, cauliflower, celery, broccoli, babycorn, zucchini, bok choy, sweet corn, green peas, shitake mushrooms, etc.

The difference between this soup and any other soup is that there are no fancy spices, sauces, or starch. It is mostly veggies simmered in water till their flavors are released. You can also add chicken, fish, or other meat while preparing clear soups - and this tastes great as well. You can add locally grown vegetables as well as exotic ones. I generally prefer doing this soup when I have several veggies in small amounts in my fridge that I have to clear š Some vegetables that can be added to the clear soup are onion, garlic, ginger, sweet corn, mushroom (any variety), babycorn, broccoli, cauliflower, zucchini, capsicum (bell pepper), bok choy, green peas, celery, cabbage, green beans, lemon grass, lemon, lemon zest, spring onions or green onions etc..I generally go with those veggies that are in my pantry that particular day. Avoid starchy vegetables if possible. To make a clear soup, you will have to simmer all veggies in water until they are cooked through completely, and flavors are released. You then strain this water and add sauteed garlic and ginger if desired. But we love eating those veggies and do not discard them as they are rich in fiber. So I end up preparing thisĀ one-pot soupĀ where I first saute garlic and to that add veggies and boil, and serve it hot. It is a type of clear soup with prominent flavors of lemon and coriander leaves. The preparation style is similar to clear soup. You just add lemon and coriander in clear soup for additional flavor and vitamin C benefits š Lemon is a perfect immunity-boosting ingredient. 1 tablespoon Oil¾ teaspoon Salt, adjust to taste½ teaspoon Pepper powder, adjust to taste3 cups Water 1 tablespoon Garlic cloves, finely chopped6 to 8 Mushrooms, sliced8 Broccoli florets1 Carrot, small diced4 Babycorn, chopped½ Zucchini, chopped into cubes¼ cup Cilantro or Coriander leaves and stem, chopped½ teaspoon Lemon or Lime zest1 tablespoon Lemon juice (or approx juice of 1 small lemon) In a pan on medium heat, add oil. Once hot, add garlic cloves and saute till light golden for a minute on medium flame. To this, add mushrooms and saute for a few seconds. Add veggies given in the list one by one - broccoli, carrots, babycorn, zucchini, and coriander leaves. Then add 3 cups of water, salt to taste, lemon zest, and bring it to a boil. Cover and simmer for approximately 6 to 8 minutes or until veggies are cooked through and flavors are released. Check out the video here Finally, add pepper powder, lemon juice, and mix. Today I was out of ginger š Feel free to add 1 tablespoon of grated ginger for additional flavor. Good if you are making it to soothe sore throat during cough or cold. Use any vegetable combination of your choice. But make sure there is a balance between all of them. Add herbs of your choice. For a protein-rich soup, you can even add paneer or tofu. Else add meat of your choice. Love spicy soup? Add green chilies or jalapenos or red pepper flakes.
Turn on SAUTE mode of your IP. Add oil. Once hot, add garlic and saute for 30 seconds. Next, add mushrooms and saute for 30 more seconds. Add broccoli, carrot, babycorn, zucchini, cilantro or coriander leaves, lemon zest, salt, along with 2 ½ cups of water. Cover the instant pot with the lid. Set the vent to sealing position. Pressure cook on HIGH for 2 to 3 minutes and quick release. Open the lid, add lemon juice, pepper powder if desired, and stir. Serve hot and enjoy. To make chicken lemon coriander clear soup, cook the bone-in chicken (adds more taste and flavor), along with vegetables, and cook until chicken is cooked completely. Now remove the chicken and shred them into pieces.Add a few shredded chicken pieces and the clear soup in a serving bowl, serve hot and enjoy.
