This vegetarian dish is often served along with sarso ka saag  (mustard green gravy) for lunch or dinner. Another favorite winter dessert recipe that I generally like to prepare in USA during thanksgiving and Christmas is Carrot Halwa (Gajar ka halwa)

Maize flour (makki ka atta) or Corn meal is highly nutritious. Corn flour is good source of carbohydrates, iron and dietary fiber. It is very rich in vitamins and minerals like b6, magnesium and folate. Unlike other flour, cornmeal does not contain any gluten. It is therefore safe for gluten intolerance and celiac disease In United states and western countries corn flour is ground cornmeal or powder from dried whole corn kernels. Its light yellow in color while cornstarch is white powder made from starchy part of corn kernel. In India, makki ki atta (maize flour) is different from corn flour. Corn flour is just plain white color and also referred to as cornstarch here. Nachos, tacos all use maize flour or corn flour from ground cornmeal. Maize flour or Corn flour is gluten free. This is one of the best recipe to try if you are on vegan, gluten free diet. This flour contains high glycemic index. So it is better you eat in limitation or avoid as it may increase your blood sugar level. To make these flatbread soft, I have added whole wheat flour. You can also add oil while kneading or mooli (grated white radish or winter radish) in the recipe.

Preparation time : 30 minutes Serves : 8 roti bread Corn flour - 1 cup Wheat flour - ½ cup Warm water approx ¾ cup Oil - for cooking the bread ( non-vegans can also use butter) Salt to taste

Add the corn flour, wheat flour, salt to taste and mix. Now add warm water little by little and knead to make firm dough. This dough should not be sticky. Be careful while adding water. Cover it and keep it aside for 20 minutes. Take small piece of dough on your working surface, shape them into ball and pat it with your palm and fingers to form bread of medium thickness. It is difficult to roll out this bread using rolling pin. Heat tava / griddle and grease with butter. Place the bread on it and drizzle some more butter. Cook on medium high flame till one side is little browned. Then flip on the other side and drizzle some more butter. Cook until it becomes golden brown on both the sides. Repeat the process for remaining dough. Corn Flour Bread is ready. Serve hot with butter, Sarson ka Saag and enjoy.

Tip and Info :

If you find it difficult to find the corn flour in the stores near you then grind the dried corn kernals to smooth powder and use it in the recipe. It is easily available in any Indian store as corn maize flour OR makki ka atta. I got the corn flour from Fresh Thyme store. You also get Bobs Red Mill Corn Flour.
