A small second-hand cookbook on salads, purchased by my mother at a sidewalk sale in New York City in the early 1980s, inspired this recipe. For years, it was featured at many family dinners and lunches. Bananas - I recently read on the media franchise eatthis.com that the riper the banana, the greater its nutritional value. This recipe is perfect for using ripe bananas that often go to waste. Cottage cheese - Use full-fat cheese for a creamy texture in the breakfast bowls. Grapefruit - Juicy, sweet, and tangy grapefruit adds a refreshing flavor to this breakfast. Walnuts - These add nutritional value and a nice crunchy texture to the breakfast bowls.

Substitutions & variations

Use a different fruit - Add some crushed pineapple or your favorite berries to the bowls. Swirl my plum jam, blueberry compote, or raspberry sauce into the bowls. Make it savory - Season the cheese with salt and black pepper and add some vegetables, like cucumber or tomato. Try topping with a sliced avocado and drizzle chili crunch for a slight kick. Try different toppings - Add pumpkin seeds, granola, and coconut, or change the nuts. If you’re a fan, use a sprinkle of cinnamon. Add it to a toast or bagel - Instead of making bowls, top a whole-grain toast or bagel with cottage cheese and toppings.
