For the Cranberry Chicken recipe, I have used frozen cranberries. First prepare cranberry sauce or paste. In a blender or mixer-grinder, grind frozen cranberries into smooth thick paste. To this, I have added some simple seasonings like garlic powder, onion powder, ginger, red chile powder, curry powder (garam masala powder), fresh cilantro, and salt. You can vary the amount of flavorings as per your family’s taste.

Marinate chicken thighs with this flavored cranberry paste or cranberry sauce, cover the bowl with plastic wrap and refrigerate it overnight. If you are in a rush, you can marinate it for 30 minutes before you grill. Longer marination ensures that every bite of the chicken is flavorful, as well as juicy and tender. When you are ready to eat, grill them over a stove top on a cast-iron griddle or using gas/charcoal grill and serve. To prevent the skewers from burning soak them in water at least 30 minutes before using. Metal skewers may be used if you have them handy.
