Dates Kheer is not only easy to make but a great recipe to satisfy your sweet craving if you are on a weight loss journey or a diabetic-friendly diet. Also, this kheer is one of the best sweet recipes to make during Ramadan, Eid, Ram Navami, Diwali, Ugadi, Holi, or any other festival throughout the year. You can easily make this kheer vegan by substituting milk with dairy-free or plant-based milk like cashew, almond, coconut, oat, or soy - all work well.

Dates are high in fiber, thus good to control blood sugar levels and also prevent constipation. High in antioxidants. Natural sweetener. Good for kids as it also promotes brain health.

Ingredients for Dates Kheer or Payasam or Khajoor ki Kheer

1 tablespoon Ghee 30 Seedless dates 2 tablespoon Almonds or Badam 2 tablespoon Cashews ¾ + ¾ cup Milk ½ teaspoon Cardamom powder 1 teaspoon Ghee 1 tablespoon Cashews 1 tablespoon Almonds

How to make Dates Kheer or Payasam or Khajoor ki Kheer

In a pan on medium heat, add ghee. To this, add seedless dates and saute for a minute. Add cashews and almonds and continue to saute in medium flame for 3 to 4 minutes or until it becomes light in color. Let this cool completely. Check out the video here Add this to a blender along with ¾ cup of milk and blend it to a smooth paste. Keep this aside.

With the same pan back on medium heat, add 1 teaspoon ghee, followed by cashews. When cashews turn light golden in color, add raisins, and saute until raisins plump up. Transfer this to a plate and set it aside. This step is optional. You can skip the garnish entirely. To the same pan, add the dates paste with 1 cup water and remaining milk, and bring it to a boil. Simmer for 4 minutes. If the mixture thickens, you may add ½ cup of water and bring it to a simmer. Finally, add cardamom powder, mix, and switch off the flame. Transfer it to a serving bowl. Garnish with sauteed raisins and nuts if desired and enjoy.

How to serve dates kheer or pudding?

Dates or Khajoore ki kheer can be served warm or chilled as an after-meal dessert or as a breakfast or snack.

Tips:

I have used fresh dates in the recipe. If kheer thickens and you end up adding more milk, adjust the sweetness by adding sugar and jaggery.
