Tapioca drink with fruit
Sabudana, also known as tapioca or sago, is the most preferred ingredient during fasting, upvas, and vrat days. If you want a quick and refreshing recipe, try this delicious drink. To make this drink, you can combine sabudana (sago) with any fruit. Today, we have used dragon fruit (pitaya) as it is easily available. No custard powder, rooh afza or coloring agents are added to make this tapioca drink. You can also try or combine apple, mango, and watermelon. Ingredients
Dragon fruit: Also called pitaya. Any color will work, but if you want a pink color, then use pink dragon fruit. Milk: Full-fat whole milk. For the vegan version, use dairy-free milk. Condensed milk: Sweetener used. Sago: Also known as sabudana or tapioca pearls. Check out the recipe card for the full list of the ingredients.
Step-by-step instructions
In a large pot, bring water to boil. Add sabudana and cook for about 15 minutes, stirring occasionally, until it becomes translucent. Switch off the flame. Cover and set aside for 10 minutes. Now drain the sabudana and rinse under cold water to remove any starch. Keep this aside. In a large bowl, add chilled and condensed milk and whisk. Add the dragon fruit cubes and sabudana and mix. Refrigerate for 1 hour. Serve chilled, and enjoy.
Tips
Condensed milk gives this dragon fruit sago the best flavor. If it is not available, use sugar or honey. You can combine dragon fruit with apples, mangoes, etc., to make a fruit sago. It becomes a refreshing and filling drink for hot summer days, iftar, Ramadan, or Navratri vrat days. To make this sago drink vegan, you can use coconut milk instead of regular milk. Feel free to add coconut jelly or any fruit-based jelly for additional texture.
