At Easter we have ALL the excuses to have chocolate upon chocolate. And that’s exactly what this Easter Rocky Road is! Get every mini chocolate egg you can find and throw it in. Melt everything together with butter and golden syrup, press even more eggs in, along with some biscuit and marshmallow for loads of texture, then set overnight in the fridge. Simple… and simply divine!

I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker. Make sure you do this so you can get the rocky road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever. I find the easiest and quickest way is to use the microwave, but do this carefully as it can burn (no longer than 30 second bursts, stirring in between). You can also bubble up some water in a pan and place a heatproof bowl over it with the chocolate inside (make sure the water isn’t touching the bottom).
