Ingredients for Gluten-Free Carrot Bread

All-purpose flour is one of the main ingredients in this recipe. I have used Bob’s Red Mill Gluten Free Flour. Feel free to use regular all-purpose (AP) flour or bread flour. AP flour can be substituted completely (or by half) with whole wheat flour. Grated Carrot is added for its flavor, texture, and color. Sugar is added for sweetness, and Salt is used to balance the flavors. Eggs are added to give this bread its structure. Egg substitutes can be used for a vegan version of this bread. Baking Soda is used as the leavening agent. Oil and Milk help in making the bread rich in flavor and keep them moist. Oil can be substituted with melted butter to make the bread more rich and give it a nutty flavor. For the vegan version use water instead of milk. Cinnamon powder gives the bread a warm earthy note - perfect for the Fall season. You can use pumpkin pie spice powder instead of cinnamon powder. Optional Ingredients - raisins and toasted nuts. Freezer Instructions: Cover the bread with cling film, wrap it in aluminum foil, and store it in the freezer for up to 3 months. Thaw for 4 to 6 hours at room temperature or up to 24 hours in the refrigerator before serving.
