Pan-fried chicken

Ingredients
Chicken: Bone in chicken thighs or drumsticks. Boneless can also be used. For marination: turmeric, chile, garam masala powder, onion, ginger and garlic with fresh herbs like mint and cilantro. Check out the recipe card for the full list of the ingredients.
Step-by-step instructions
In a large bowl, add chicken, turmeric powder, chilli powder, garam masala powder, salt, coriander, mint, sliced onion, and ginger-garlic paste, and mix well. Let the chicken marinate for 15 minutes (minimum) to 30 minutes (preferred). Heat oil in a pan on medium-high heat. Add marinated chicken and fry for 5 minutes, leaving it undisturbed.
After 5 mins, flip the chicken to the other side and continue to fry for another 5 mins. Now, reduce the heat to medium. Stir the chicken, cover, and cook for 5 minutes. Remove the lid, stir the chicken, cover it back, and cook for another 5 mins. Remove the lid, add butter, garnish with cilantro, and give it a final mix. Serve and enjoy.
Tips
Instead of garam masala powder, curry powder or kitchen king masala can be used. Adjust the spices to taste. You can prepare this with bone-in or boneless chicken pieces.
Serving suggestions
Serve with dinner rolls or Indian bread like naan, roti, chapati, etc. Serve it along with corn on the cob, coleslaw, mashed potatoes, etc. During holidays, you can also serve this with cornbread or buttermilk biscuits.
