Why We Love Egg Bites

The super popular sous vide egg bites at Starbucks are delicious and a great power protein breakfast on the go. However, buying Starbucks coffee and breakfast every day can be ridiculously expensive. Today I’m going to show you how to make our copycat recipe for classic Starbucks egg bites, that taste like sous vide egg bites, without having to own a sous vide. You simply need to create a water bath in your oven to make amazing fluffy, ultra-soft, and decadent egg bites! You can use the popular Starbucks fillings like bacon and Gruyere cheese, or create your own flavor combinations. (You know we’ve got all kinds of tasty options below!) You can also use this recipe to make lighter egg white bites as well! 

Ingredients You Need

Eggs – whole eggs or just egg whites, if you like Cottage cheese – a delicious source of protein Shredded cheese – your favorite, like Gruyere or Cheddar cheese Spices – salt and pepper, plus garlic powder and/or any other seasonings you want Bacon – cooked and chopped, optional

How to Make Egg Bites

Preheat the oven to 300°F. Boil 4 cups of water. Once boiling, pour the water into a 9 x 13-inch baking dish and set the dish on the bottom rack of the oven to create a steam bath. Set out a 12-portion muffin tin. Spray it generously with nonstick cooking spray. In a food processor (or blender) combine the eggs, cottage cheese, shredded Gruyere cheese, salt, pepper, and garlic powder. Purée until smooth. Use a 1/3 cup scoop to portion the egg mixture out into 12 muffin cups. Fill the muffin tins about 2/3 to 3/4 of the way full. Sprinkle the chopped bacon, or any other topping, over the top of the egg mixture in each cup, adding 1-2 teaspoons of filling per egg bite. Then use a spoon to press the fillings down into the egg mixture so they are inside each egg bite, not resting on top. Set the muffin tin on the middle rack over the water bath. Bake for approximately 20-23 minutes, until the egg bites are puffed high in the muffin tins. Remove from the oven. Allow the egg bites to rest for 2-3 minutes. They will deflate and become flatter on top.

How to Make Egg White Bites

It’s easy to turn this copycat Starbucks egg bite recipe into a lighter breakfast dish! Separate eggs and measure out 2 cups of egg whites. Add to the food processor with other ingredients. When baking, keep an eye on the egg white bites… They tend to need less cooking time than bites that include yolks. What to do with the egg yolks? Use them to make chocolate pots de creme, luscious orange curd, hollandaise sauce, or to top a delicious steak tartare.

One of the many reasons this egg bites recipe is the BEST is how easy it is to customize… And there are so many options, you can mix and match without ever getting bored! Along with classic Starbucks bites with Gruyere and bacon, we’ve listed a few other tasty veggie and cheese combos below. Make any of these varieties with or without cooked and chopped bacon, ham, breakfast sausage, chicken, or other choice of protein!
