About the recipe

Indian chaat is a range of mouth-watering roadside food that includes fried snacks with flavorful ingredients and chutney that creates spicy, sweet, and tangy flavors. Chaat in Sanskrit means to taste or lick. Some of the popular chaats are mumbai pav bhaji or vada pav, crispy samosa chaat, street style bhel puri, dahi bhalla, pani puri or golgappa, aloo tikki chaat, sev puri and papdi chaat (papri chaat). 

Similarities and differences between sev puri and papdi chaat

The recipe for both papri chaat and sev puri remains the same. Both are made with boiled and mashed potatoes, onions, tomatoes, lemon juice, black salt, chaat masala, sev, tamarind chutney, and green chutney.  The only difference is in making sev puris, puffed puris are used, and to make papdi chaat, flat puris or crispy, savory crackers are used.  While making sev, puri dahi is not added, but while making papdi chaat, traditionally, yogurt or dahi is used.  When yogurt is added to the chaat with flat puris, it is called dahi papdi chaat, and when it is added to the chaat with puffed puris, it is called dahi batata puri. 

Ingredients

Chutney: Chaat is incomplete without the addition of chutney. You can make this green coriander mint chutney and sweet tamarind dates chutney in advance and store it in the refrigerator. Potatoes: Make the chatpata potato mixture with boiled potatoes, chaat masala, black salt, roasted cumin powder, red chile powder, lemon juice, and green chilies. Garnish: The key is garnish. Add finely chopped onions, tomatoes, and coriander with sev and spice powders. See the recipe card below for a full list of ingredients and measurements.

Step-by-step instructions

Follow the instructions given in the recipe to make sweet chutney and spicy chutney.  Add mashed potatoes (aloo), chaat masala, black salt, roasted cumin powder, red chile powder, lemon juice, green chilies, and salt to taste and mix them.

Assembling the Sev Puri, Papdi Chaat 

On each serving plate, arrange 5 to 6 puris. If you use the flat puris or papdis, top it with the potato mixture prepared above. Fill the puris with potato mixture if you are using puffed puris. Top these with sweet and spicy chutney as desired. If you are adding yogurt, add it at this stage.  Garnish with onion, tomato, coriander leaves, a pinch of chaat masala, and a lot of sev.  Serve immediately and enjoy. Serving suggestions: Always serve the chaats immediately once you assemble them so that the puris are crispy and crunchy. Keeping it for a long time will make it soggy. 

Tips

Indian chaat recipes are very flexible. Adjust all the ingredients to your taste.  Some other garnish ingredients are boiled chickpeas, pomegranate, grated carrots, sprouts, and beetroots. See that the puris and papdi you use are crispy and fresh. You can make them easily at home or use store-bought ones.  Homemade chutneys are always best, flavorful, and fresh. I recommend you make chutneys at home for the best flavors, just like the ones you get in the streets.
