Smoky, juicy, and tender Smoked Pork Chops are just about the most satisfying main dish there is. A thick cut of pork is super meaty and savory, but with a slightly sweeter taste than beef or other types of meat. It’s a great protein to infuse with seasonings because it takes on the flavors and aromatic ingredients. We soak our pork chops in a simple apple cider brine for several hours to get the meat perfectly tenderized, then season and cook on a Traeger smoker at 350. In only about 30 minutes these delicious smoked pork chops (boneless or bone-in!) are ready to serve with your favorite hearty comfort food sides. Pork chops – bone in or boneless chops, totally a personal preference Spices – lemon pepper, dried thyme, ground sage, garlic powder, onion powder

How to Smoke Pork Chops at 350

Ready to cook? Let’s go! First, preheat the smoker to 350°F. (This can be an electric smoker wood pellet grill like a Traeger, or a traditional wood or pellet smoker.) Use tongs to remove the pork chops from the brine and pat them dry with a paper towel. Do not rinse! Combine the spices in a small bowl. Pro Tip: There’s no need to add salt if the pork chops are brined. If you did not brine them add 1 teaspoon of salt. Next, sprinkle the dry rub seasoning evenly over both sides of the pork chops. Pat lightly to coat. Place the seasoned pork chops on the smoker grate once it reaches 350 degrees. Close the lid and smoke for 15 minutes. Use tongs to flip the pork chops over, and insert a meat thermometer probe into the thickest part of the pork chop. Continue to smoke for another 10 to 15 minutes, until the pork chops’ internal temp reaches 142-145°F in the middle. Bone-in pork chops will likely need closer to 15 minutes.
