About the recipe

Traditionally strawberry tart is a sweet puff pastry crust that is either filled with custard or whipped cream and topped with fresh strawberries. This strawberry tart is prepared using puff pastry sheets as a base and topped with fresh strawberry compote as filling. Adding chopped pistachios or nuts gives these tarts a new dimension, which I am sure you will love. Ingredients

Puff pastry sheet: - 1 homemade or store-bought puff pastry sheet for this recipe. Tart Filling: Fresh strawberries, sugar, a pinch of salt, lemon juice, and butter. Pistachios: For garnish and crunch See the recipe card below for a full list of ingredients and measurements.

How to make strawberry tarts with puff pastry sheets?

Thaw puff pastry sheets

Thaw the puff pastry sheet according to package instructions.  I use pepperidge farm sheets for all my puff pastry recipes. 

Make the tart filling or strawberry compote

Remove the stems and leaves from the strawberries, wash and slice them. In a non-stick pan on medium-high heat, melt butter/ Add sliced strawberries, sugar, salt, and lemon juice and stir for 6-8 mins until strawberries soften and break up.  Remove from heat and allow the strawberry compote to cool down to room temperature.  You can store this in the refrigerator for up to seven days. 

Making strawberry tarts

Preheat the oven to 400 F. Dust the working surface with flour and place the thawed puff pastry sheet on it. Using a rolling pin, lightly roll the sheets till they are about ½ inch longer on each side. Then, divide them into half using a pizza cutter or a kitchen knife. Transfer the divided pastry sheet to a baking sheet lined with parchment paper. Use a fork to gently pierce the sheet so it doesn’t puff up while baking.  Brush only the edges of the pastry sheet with egg wash - this gives the baked strawberry tart its beautiful golden brown color. Add a few spoonfuls of strawberry compote at the center and spread, leaving the edges. Bake for about 20 minutes or until the edges are golden brown and crispy. Allow them to cool down for a few minutes before serving. Garnish it with pistachios.  Strawberry tarts can be served as it is, warm, chilled, or with a scoop of ice cream.

Tips

Adjust the amount of sugar based on the sweetness of the berries. You can make two rectangle tarts, six mini tarts, or individual portions of the desired size. Mini tarts are great for serving at parties and picnics. You can garnish with other nuts of your choice if desired. The time to make the compote may vary depending on how ripe the strawberries are.
