You may need a splash of water when reheating to loosen up the sauce. Freezing I’m not a big fan of freezing pasta as it can go quite mushy when defrosted and reheated. All that said, there’s nothing wrong with freezing for lunch if you have leftovers, it’s just not quite as good as fresh or reheated from the fridge. As a middle ground I like to scoop out a few spoons of tomatoes, blend the rest and then put them back with the pasta so you get a few chunks of tomato bursts. I use this hand blender for this job but if you don’t have one, mash it all up with a fork instead. I tried cooking the pasta in the sauce to begin with and it wasn’t good! So I’d recommend cooking your pasta as normal in a pan and adding it to the sauce when it’s cooked. I think it’s worth the 10 minutes of having a saucepan on for a better result.
