Ingredients

Peaches: Fresh, sweet, and juicy peaches that have a soft texture ate perfect for making the salsa. Even the canned peaches can be used.Onions: Add red onions for the color, sharp and tangy flavor.Bell pepper: Bell pepper or capsicum of any desired color for additional crunch and taste.Jalapeno: Adds heat to the salsa. You can adjust the heat by reducing the amount or by removing the seeds.Cilantro: To give an authentic Mexican flavor and make it refreshing, fresh herb cilantro is added to peach salsa.Ginger: Warm and spicy flavor that complements the other ingredients.Lemon juice: Adds acidity and balances out the sweetness. You can use lemon or lime juice.Sugar: A little sugar will enhance the natural sweetness of the peaches.Salt: Enhance the flavor of overall salsa and balance the sweetness.Seasoning: Black pepper powder and red flakes are all that I used for the heat. Variations

Mango peach salsa: Add one sweet and ripe chopped fresh mango and other ingredients to make peach mango salsa. Grilled peach salsa: If you like the smoky flavor, then you should definitely try this version for your summer BBQ parties. You need peaches halved and pitted. Brush the halved peaches with olive oil, and grill them cut-side down for about 3-5 minutes or until they are charred and tender. Once cooled, chop and combine with other ingredients. Peach pineapple salsa: Combine one cup of fresh and sweet diced pineapple with the remaining ingredients to make peach pineapple salsa. You can also grill the pineapples along with peaches if desired. Peach avocado salsa: If you love making your salsa creamy, add one diced avocado to the recipe. Peach tomato salsa: You can add heirloom or cherry tomatoes to the recipe, as they are in season now! To make your salsa protein-packed and healthier, add 1 cup of cooked black beans.

Step by Step instructions

Add peaches, onion, bell pepper, jalapeno, cilantro, ginger, lemon juice, and sugar, and stir well in a large bowl.  Next, add salt to taste and season with black pepper powder and red pepper flakes. Keep it in the refrigerator for at least 30 minutes to 1 hour or until you are ready to serve Serve it with chips, top it on tacos, baked/grilled fish or meat, or even serve it as a side with your favorite Mexican dish. Pro Tips

You can mix and serve the salsa immediately, but I highly recommend keeping it in the fridge for at least 30 minutes before serving so that the flavors get to meld together.  Fresh salsa will not freeze well, and I would not recommend it.  This salsa recipe is very flexible. You adjust all the ingredients to taste. If you want it sweeter, add more peaches. Add more jalapenos or a dash of chile powder if you like it spicy. For a milder version, skip black pepper powder and pepper flakes.  Red onions add a sharp flavor. You can add white or yellow instead.  I have not peeled the peaches; we love it this way. You can peel them if needed.
