Corn has been one of my favorite vegetable since childhood no matter how it is prepared : boiled (boiled corn with cajun seasoning), grilled or simply as an ingredient in the gravy (gajbaje). Corn on the cob is popular across the world. Back in India I was preparing this directly on a gas stove. I must say this is one of the classic Indian street food popularly known as street style bhutta (butta). There are many ways in which this can be prepared. Every region has its own unique way and you can find the carts preparing butta directly on the charcoal near the beaches, outside parks or popular shopping streets in India. Some of the popular seasonings include salt and lemon rub, spicy green chili chutney, salt and red chile powder, pesto, cheese etc. When I prepare corn on the cob I make sure I add my family’s favorite spices to the seasoning mix. Vary the ingredient amounts as per your taste. What is your favorite way to have it. I would love to hear and also try it out. Corn - 4 Butter - 4 tbsp Garlic powder - ¼ tsp Onion powder - ¼ tsp Pepper powder - to taste Salt - to taste Red Chile powder / Cayenne - ½ tsp Chat masala- ¼ tsp Lemon juice - 1 tbsp Coriander leaves - for garnish Step I
Prepare an outdoor grill for high and direct heat. Remove husks and silk from the corn. Place the corn directly on hot grill. Keep rotating the corn as dark spots appear and kernels develop some char spots on all sides and they are uniformly cooked.(approx 10 minutes)
Step II
Melt the butter. Add garlic powder, onion powder, pepper powder, salt, red chile powder, chat masala and mix well. Rub each corn with lemon juice followed by the butter-spice mixture prepared above. Place the corn on the grill for additional 30 seconds to 1 minute if desired. Grilled Corn On The Cob is now ready. Serve and enjoy.

How to Grill Corn on the Cob
Prep the Corn
Remove Husk and Silk – Shuck and remove as much silk as you can from the corn.Soak the Corn – Pour the water into a large pot or bowl. Then put corn into the pot and soak for at least 30 minutes or overnight. This helps keep the corn moist as it cooks.Make the Garlic ButterPreheat grill to high heat.Combine – In a small bowl, combine garlic butter andCreole seasoning. Set aside.
Grill the Corn
Grill – Place the corn directly on the preheated grill, occasionally turning, until it’s charred and cooked through, about 15-20 minutes total.Brush the Corn with Butter Mixture – Remove and serve slightly cooled, and brush with additional garlic butter. Now is an excellent time to add optional toppings if desired.

Make-Ahead Instructions
Of course, grilled corn is best enjoyed fresh from the grill for that perfect plump and crisp. But to save you time, you may soak the corn the night before (but not more than 8 hours) to ensure moist corn, especially if you choose to grill corn with the husks still intact. You can also make your garlic butter a couple of days ahead and keep it in the fridge for up to 3 weeks. So you can also enjoy it with your bread. Talk about maximizing its uses. 😉
Serving and Storage Instructions
Aside from garlic butter, you’ll love our grilled corn on the cob with sour cream or mayonnaise and cheese sprinkles. That’s why leftover is a rare occurrence in our home. But in case you’re wondering what to do with your leftover corn, here’s how to store them. Wrap leftover cooked corn individually in foil and store it in an air-tight container or freezer-safe resealable bag. They will last in the fridge for four days and four months in the freezer. You can also cut the corn off the cob and freeze it for later. When ready to serve, simply thaw the frozen corn in the fridge overnight. Reheat on a grill for about 10-15 minutes rotating several times until heated. If using a microwave, cover the corn with a damp towel to prevent the corn from making a mess and avoid drying out. (I’m sorry to burst your bubble; it won’t pop like popcorn. ;P)
