Paddu recipe

This Indian dish is made by steaming the batter in a mold which is called appe pan. Appe is a Marathi word. It is called paddu in Kannada, paniyaram, guliyappa in Tamil, ponganalu, gunta in Telugu, appo in konkani and appam in Malayalam. This spicy and savory version of appe or paddu can be prepared for an evening snack. Since it remains soft for a long time at room temperature, you can pack this for the lunchbox, during travel, potluck, etc. To make appe or paniyaram you will need appe pan, Æbleskiver pan or the paniyaram chatti. If you do not have any of these, you can still make the batter and cook instant dosa on your skillet. Serve appe (appo) with spicy coconut chutney, Mangalorean-style fish curry, or chicken curry.

Ingredients

Flour: whole wheat flour for instant version and form the base of the dish. Rava: Sooji or semolina adds texture. Spices: ginger, green chilies, pepper, and cumin seeds. Herbs: Coriander leaves for flavor. Check out the recipe card for the full list of the ingredients.

Make the batter for instant appe

In a bowl, add flour, semolina, baking soda, green chilies, ginger, cilantro, pepper powder, cumin seeds, and salt to taste and mix. Now add water little by little to get a medium-thick batter. Keep this aside for 5 minutes.

How to cook masala paniyaram?

Heat a non-stick appe pan. Drizzle oil on each mold, and add batter to each pan mold. Cover and allow it to cook on a medium flame. When the bottom becomes golden brown, using the back of the spoon, flip and cook on the other side till it’s crisp and golden brown. Drizzle oil as needed.  Repeat the process for the remaining batter. Serve hot with any south indian coconut chutney, and enjoy.

Tips

The amount of water required may vary depending on the brand of flour used and weather conditions. You can substitute green chilies with jalapeno, serrano pepper, or even red chile powder. Taste may vary accordingly. Feel free to add finely chopped onion and crushed curry leaves to the batter.  You can add ½ cup of yogurt to the batter for better flavor and texture.
