To make this chaat, all you need is the bread of your choice, green mint chutney, and tamarind or date chutney with sev, onion, and pomegranate for garnish. Instant Dahi Bhalla is one of the best and easiest snack recipes to try for your Holi and Diwali parties. I have already shared the traditional way of making Dahi Bhalla or Dahi Vada previously on my blog. The recipe given below is for those who want to avoid frying and spend less time in the kitchen and more time with family and friends.

As I always mention in my chaat posts, if you ask any Indian staying outside the country what they miss the most, the first answer would be eating chaats street-side prepared on small gaadis or pushcarts saying to the vendor - bhaiya ek pani puri dena, aur sev puri dena, etc. 🙂 I have most of the chaat recipes covered on my blog, but if you are looking for something quick with dahi, you can check the recipe for dahi aloo chaat. 

The traditional way of making dahi bhalla takes time and patience. It starts with soaking dal/lentils, grinding them, deep-frying, and then again soaking the lentil fritters in water. Water is squeezed out and then dipped in sweetened yogurt until ready to serve. If you are a beginner cook or someone who hates frying, you will not love the process. But what will you do if you have a quick craving for chaat? A special recipe for all of you 🙂

I am sharing a shortcut recipe today to try this holi party. This idea was shared with me by my dear friend Chitra Nayak.  There is absolutely no compromise on taste or texture. Preparing this chaat is simple than ever and tastes better than the original recipe. Even kids can assemble it the way they want, and if they love curds or yogurt, they will love this chaat. For a more healthy version, use multigrain or brown bread. I have used regular white bread 🙂

Ingredients for Instant Dahi Bhalla or Soft Bhalle

For Coriander Mint Chutney Or Green Chutney

1 cup Coriander leaves or Cilantro ¼ cup Mint leaves or Pudina 3 to 4 Green chilies 1 inch Ginger 1 Garlic clove Juice of ½ lemon ½ teaspoon Salt 2 tablespoon Water

For Tamarind Chutney Or Imli Chutney (Sweet Chutney)

1 teaspoon Oil ½ teaspoon Cumin seeds ⅛ teaspoon Asafoetida or Hing ½ teaspoon Ginger or ginger powder ¼ cup Tamarind (soaked in one cup of water and strain, see instruction below) ½ teaspoon Chile powder ½ to 1 teaspoon Chaat masala ½ cup Sugar or Jaggery, in increments to taste

For Sweetened Yogurt Or Dahi

500 grams Thick yogurt ¼ teaspoon Salt 1 tablespoon Sugar

Other Ingredients As Needed For Garnish

16 Bread slices Sev or Khara Boondi Onion, chopped Cilantro or Coriander leaves, chopped Chaat masala

How to make Instant Dahi Bhalla or Dahi Bread?

Making of Green chutney or Coriander mint chutney

In a mixie or blender jar, add cilantro, mint leaves, green chilies, ginger, garlic cloves, and pulse to form a coarse paste. Now add lemon juice, salt, water, and grind to a smooth paste. Keep this aside.

Making of Imli chutney or Tamarind chutney or Sweet chutney

In a pan on medium flame, add oil. Once hot, add cumin seeds, hing, ginger, and saute for a few seconds. To this, add strained tamarind pulp with juice, chile powder, chaat masala, and mix. Finally, add sugar as needed and bring it to a boil. Simmer for 5 minutes and set it aside. You can check the video here. 

Making of sweetened yogurt.

In a bowl, add yogurt, salt, sugar, and whisk. Keep this aside.

Assembling Dahi Bread or Instant Dahi Bhalla chaat

Cut the sides of the bread. On one side of a bread slice, add green chutney. On the other bread slice, spread tamarind chutney. Place this as a sandwich on a plate. You can check the video here.  To this, add sweetened yogurt as needed. Garnish it with green chutney, tamarind chutney, sev, onion, cilantro, chat masala, and pomegranate. Serve immediately and enjoy.
