BUT. In need of a sugar treat to cheer up this week, that didn’t involve any effort or baking, I decided to give them a go. I’ve made a few batches of these, testing the ratio of marshmallows to cereal and this is the one we voted best. Sticky and chewy but still hold their shape without being gooey. A win! Hope they brighten up your week as they’ve brightened up ours! ✅ Mix it up in just 10 minutes. ✅ No baking needed. ✅ Just 5 ingredients. Yes! Instead of putting the butter and marshmallows into a large pan, put them into a big bowl (oiled first with a little sunflower or vegetable oil). Microwave for 1 minute and beat very well. Microwave for a further 30 seconds and beat again. It may need one more 30 second burst. Be sure to beat it very well and keep an eye on it as the marshmallows will really puff up in the microwave! These are best eaten within 5 days of making. They will get slightly more sticky the longer you keep them for. They’ll still taste good though! Room temperature in an airtight tin, cake stand or bag is fine. If the weather is very hot when you’re storing them, you may want to put them in the fridge and let them come to room temperature before serving.

I like to use a non stick, 20cm x 20cm shallow baking tin like this one. Another size/shape is fine, but obviously the treats will be thicker or thinner accordingly. Be sure to line the tin with baking paper to get them out easily. You’d just need to use Gluten Free Rice Krispie cereal here. Yep! Replace the butter with dairy free spread and omit or replace the chocolates with a dairy free alternative.
