When I really want to prepare something quick and healthy I either prepare dal or use canned beans like black beans, kidney beans or chickpeas to prepare coconut based konkani curries. I always love to make healthy variations in dal as my family loves it and today I have mixed 3 different types of dals or lentils and added vegetables that were available in my pantry to make it even more healthier. This is very flexible recipe. You can add any dal combination and any vegetables of your choice and prepare this dish. The best way to consume protein and veggies in your diet 🙂  For those who are watching weight can ignore oil completely in the recipe and can have this even as a lentil vegetable soup.

Cauliflower Dal Onion Tomato Dal Garlic Dal Pepper Dal Ginger Dal Dal Khichdi Dal Fry Maa Ki Dal

Preparation time : 25 minutes Serves : 3 Toor Dal or Yellow split pigeon peas - ¼ cup (Check for substitutes) Moong Dal or Yellow lentil - ¼ cup Urad Dal or Black gram( with or without skin) - ¼ cup Onion chopped - 1 Garlic cloves chopped - 3 Green chili chopped - 1 Ginger finely chopped - 1 inch Cashews - 1 tbsp Bay leaf - 1 Turmeric powder - ¼ tsp Cumin seeds - 1 tsp Red chile powder - 1 teaspoon (vary to taste) Garam masala powder or Curry powder - ½ tsp Kitchen king masala  - ½ teaspoon (optional) Broccoli florets or Cauliflower chopped - 8 pieces Carrot finely chopped - 1 Capsicum or Green bell pepper finely chopped - 1 Frozen green peas - ¼ cup Coriander leaves or Cilantro chopped - 2 strands Salt - to taste Vegetable oil or Butter - 1 tbsp Step I

In a pressure cooker wash and add moong dal, urad dal, toor dal and water, bring it to a nice boil. Close the lid and pressure cook for about 8 to 10 minutes or 2 whistles on medium flame. See that the water is at least half to three fourth inch above the dal. Once the cooker cools down, remove the lid and whisk the cooked dal until it is blended into a smooth paste

Step II

Meanwhile in a non-stick pan add bay leaf, vegetable oil, cumin seeds and cashews and saute till cashew becomes light golden in color. Now add the onion, green chilli, ginger, garlic cloves and turmeric powder, pinch of salt and sauté till onion and garlic becomes translucent.

Step III

Add all the chopped vegetables and sauté them for 2 to 3 minutes. Depending on how you like the veggies (crisp and cooked or simply soft and mashable consistency) continue to saute them for desired texture. Now add the cooked dal, red chilli powder, garam masala powder, kitchen king masala, water for desired consistency, salt to taste and bring it to a nice boil. Finally add the coriander leaves or cilantro and mix well. Mixed Vegetable Dal is now ready. Serve hot and enjoy.

Tips to make best lentil curry or vegetable curry

You can mix and match any dal or lentil combination of your choice. Some of the lentils or dal that you can use apart from the one given in ingredient list include red lentil (masoor), green lentil. Feel free to use any combination of veggies of your choice. I have added those that where available in my pantry today.  Leafy vegetables like kale, chard, spinach (palak) can also be added. Adjust the spices to taste.
