I first had this pizza in Kings Rosemont restaurant in Illinois, and I must say this was one of the best pizzas with an exciting combination of flavors. The combination of sauteed mushrooms, caramelized onions, and vibrant and refreshing arugula with brie and mozzarella cheese creates an amazing balance of flavors. Every bite has the perfect balance of texture the crispy crust, gooey cheese, and tender mushrooms. You just can’t stop this pizza from eating one slice. Overall this is a delightful treat for all pizza lovers who love pizza made with bold flavors and fresh ingredients. Use store-bought or homemade pizza crust. This pizza is an excellent choice for your next pizza party or for any get-together or family occasion—a total comforting meal.

Ingredients

Pizza crust: You can either make the best pizza dough at home with the basic ingredients or use store-bought pizza crust for this recipe. Mushrooms: I have used fresh button mushrooms. You can use portobello mushrooms or shiitake or combine them. Onions: Cut the onions lengthwise and caramelize on low flame. White onions work the best. Cheese: Mozzarella and brie cheese work best with mushrooms and onions. Arugula: Adds a peppery flavor to your pizza. See the recipe card below for a full list of ingredients and measurements.

Step-by-step instructions

Make the best pizza dough at home

Add warm water and sugar to a bowl. Sprinkle yeast and leave it undisturbed for 10 minutes. Let the yeast activate.  Add salt, olive oil, and flour in increments and knead to get a smooth yet slightly tacky dough.  Transfer the dough to a greased bowl, cover, and let it rest for 1 hour or until doubled in size. 

Prepare the toppings

Heat olive oil in a nonstick pan. Add onions, salt and stir so that onions are coated in oil.  Cook this on a medium to medium-low flame for 15 to 20 minutes, stirring occasionally until the onion becomes golden and caramelized. Transfer this to a plate. Caramelizing onions will give intense and memorable flavors. To the same pan, add mushrooms and saute till it develops color. Switch off the flame. 

Bake pizza with mushrooms and caramelized onions

Preheat the oven to 450 degrees F. Grease your 10-inch or 12-inch pizza pan with olive oil or butter. Transfer the risen dough to the floured surface and roll it out to a ten or 12-inch circle of desired thickness.  Transfer this to a prepared pizza pan. Spread the caramelized onion, sauteed mushroom, mozzarella cheese, and brie cheese, and drizzle some olive oil on top. Bake for about 15 to 20 minutes or until it is golden brown. 

Prepare the arugula topping

In a bowl, add the arugula, sprinkle some salt, pepper powder, drizzle olive oil and toss until it’s well coated. Top the baked mushroom pizza with arugula or serve it as a side with pizza and enjoy. 

Tips

The amount of pizza toppings can be varied as desired.  Any type of mushroom, from regular white mushrooms to shitake, portobello will work for this recipe.  If you want a crispy crust, then use bread flour instead of all-purpose flour.  This is a vegetarian version of mushroom pizza. To make it vegan, simply omit the cheese in the recipe or use any vegan cheese.  Any leftover pizza can be stored in the refrigerator with each slice separated between parchment paper in an airtight conatiner.  I have made this pizza very similar to the one that was served in a restaurant I tried. You can always spread a spoonful of tomato sauce or pesto sauce before adding the toppings if desired.

Freezer instructions

Pizza tastes the best when baked and served fresh. So I highly recommend freezing it before baking. Tightly wrap it using plastic wrap and place it in an airtight conatiner. Thaw and bake as per the instructions.
