Chicken breasts will become hard when overcooked, but it is difficult to overcook chicken thighs. The recipe is very versatile. You can add any seasoning mix of your choice. Chicken thighs are affordable, thus making it a budget-friendly option for meal prepping.
Ingredients
Chicken thighs: This recipe uses bone-in, skinless chicken thighs. You can also use bone-in, skin-on, or boneless thighs. The cooking time will vary accordingly. Oil: This helps the seasoning to stick and will make the exterior extra crispy Seasoning: I have used lemon, salt, ginger-garlic paste, chile powder, fresh herbs, Italian seasoning, and sugar. Step-by-step instructions
Preheat the oven to 425 degrees F. Add the juice of lemon, salt, ginger garlic paste, red chile powder, Cilantro, Italian seasoning, and brown sugar, and whisk. Now add the chicken thighs to the same bowl and mix so that they are coated well on both sides.
Arrange the chicken thighs on a single layer on cast-iron skillet or baking dish. Pour oil over the chicken thighs. Bake the thighs for about 25-30 minutes or until the internal temperature reaches 165 and the exterior turns crispier. You can baste around 15 minute mark if need.
Tips
Any leftovers can be stored in the fridge in an airtight container for 3 to 4 days. You can also freeze them for up to 3 months. You can use garlic powder and grated ginger instead of paste in the recipe. Melted butter can be substituted for coconut oil. See that the thighs develop a charred look like barbecue chicken for the best taste and flavor. You can skip the spices and add what you like. You cannot go wrong with this oven-baked recipe. As a meal prep, you can even marinate the chicken thighs in seasoning and keep them in an airtight container in the refrigerator until ready to bake. Any leftover cooked thighs can be chopped and added to soups, salads, sandwiches, or even fried rice.
