How to Make Peach Cobbler Using Canned Peaches

Preheat your oven to 375℉ (190℃). Peaches – In a medium-sized pan over medium heat, cook the drained peaches, ¼ cup reserved juice, granulated and brown sugar, spices, lemon juice, and cornstarch until the sugar dissolves. Stir occasionally until it thickens. Then, remove it from the heat and add 1-2 tablespoons of butter. Set aside (or spoon it into the baking dish). (Photos 1-4) Dry – In a separate bowl, mix the flour, sugar, baking powder, and salt. (Photo 5) Wet – Stir in the buttermilk, vanilla, and butter into the dry ingredients until just combined. (Photos 6-7) Assemble – Spoon the hot peaches and syrup into the baking dish. Scoop the batter evenly over the peaches; do not stir. (Photo 8) Bake – Sprinkle optional brown sugar over the batter, then bake for 30-35 minutes or until the crust turns golden brown. Serve – Allow the cobbler to cool slightly; it’s best served warm. For comfort food at its finest, top it with a scoop of vanilla ice cream or a dollop of whipped cream.😋

Make-Ahead Instructions

To make peach cobbler ahead of time, assemble it in an oven-safe dish, but don’t bake it. Cover it tightly and store it in the fridge for up to two days or in the freezer for up to three months.  When ready to bake, thaw it in the refrigerator overnight, then bake as directed. Add 10-15 minutes to the bake time if it’s still partially frozen.

Serving and Storage Instructions
