If you’re looking for a quick vegetarian satay noodles recipe, this one is nice and speedy, ready in about 15 minutes, with loads of flavour and texture and from the salty halloumi. You can adapt it to suit your tastes, adding whichever veggies you have in, or you can add meat too if you fancy some satay chicken.

It’s the perfect cheese to cook with as a chicken or beef alternative as it’s so meaty and salty – and yes, a little bit squeaky too! Peanut butter is such a great ingredient too – it’s delicious in both sweet and savoury dishes. When testing this recipe, I wanted to see if it would work as a dupe for a peanut sauce (along with a few simple extras), and it worked! It’s a real bargain ingredient to have in the cupboard too. When I initially published this recipe for a Midweek Meal Plan, it cost 89p from Aldi!
Peanut Butter Noodles Ingredients Notes
Halloumi – This recipe has x2 packs of halloumi, but you can just use 1 if you prefer Noodles – I like to use egg noodles for their taste and consistency, but you can choose a different style if you like. Always cook to the pack instructions Peanut butter – I use smooth but you can use crunchy if you like a bit of texture For the rest of the satay-style sauce – Soy sauce, soy sauce, sweet chilli sauce, garlic puree, honey and a little boiling water
In the freezer Cooked noodles don’t generally freeze very well, but I would rather freeze than throw it away. Make sure you defrost thoroughly before reheating.
