I have tried several poke cakes before, but this is the first time we are making poke cake in our kitchen, and this was soft, moist, cool, and light with melt-in-mouth homemade whipped cream. It is definitely one of the best cakes to take for your summer parties, 4th of July party, potluck, or picnics, but once you try it, you will not wait for summer and keep preparing them all year round.

I have used strawberry and black currant jello this time as they were the only two available at my nearby grocery store, but honestly, I love strawberry and blueberry jello, and I use it in my dessert recipes all the time.  Bake any cake you are a master in, your favorite recipe, or even use a cake box mix as I did. Once the cake is baked and cooled for some time, poke holes with the back of a spoon or fork. You can check it here.  Pour the jello: Depending on whether you are going for one or multiple jello flavors, prepare the jello like you usually do from the box mix and pour it into the cake holes you have made earlier.

Chill it in the refrigerator: Once you pour the jello, keep it in the fridge for at least 1 to 2 hours. Meanwhile, prepare the whipped cream and keep it in the refrigerator. When you are ready to serve, spread the whipped cream on top or make a two-layered poke cake. To make a two-layered poke cake, split the cake into halves using a knife. Place one half of the cake on a cake stand and spread the whipped cream over it. Place the other half of the cake on top of it. Cover the cake with the remaining whipped cream or give it a rustic look. Top it with sprinkles or your favorite fresh fruit and berries.

Ingredients for Poke Cake

1 White or yellow cake box mix with any other ingredients mentioned in the box. 1.5 oz Red jello mix with ½ cup water (raspberry, strawberry, cherry - your preferred flavor) 1.5 oz Blue jello mix with ½ cup of water (blueberry or black currant - your desired flavor) 1 cup Heavy whipping cream (250 ml) ½ cup Sugar 1 teaspoon Vanilla extract

Prepare the cake as per the instructions given in the box mix, or use your favorite cake recipe. Let the cake cool for 15 minutes. Poke several (about 10 to 12) holes with a spoon or fork. Prepare the Jell-O of your preferred color and flavor and spoon it into the holes you have made. You can check the video for the making of jello here.  Keep the cake in the refrigerator for 1 to 2 hours. 

In a bowl, add heavy whipping cream and whisk until cream becomes light and streaks begin to form. At this stage, add sugar and vanilla extract and beat until medium-stiff peaks are formed. Refrigerate until ready to use. Split the cake into halves. Place the bottom half on your cake stand and spread the whipped cream. Place the other half of the cake on this and cover the entire cake with the remaining whipped cream and give finishing touches as desired. I chose to decorate the top with some sprinkles. Poke cake is one of the best make-ahead cake recipes. Note that the gelatin texture is not formed inside the cake, but it takes some time - usually 1 to 2 hours for the jello to get soaked in the cake. Plan accordingly. Because of the addition of jello, I highly recommend you store it in the refrigerator and eat it as and when required for the next 2 to 3 days.
