If you want a quick evening after-school snack or want to try something with leftover mashed potatoes, add these potato cheese patties to your to-do list—a simple recipe with available ingredients from your pantry. Traditionally, cutlets are deep fried, but to make them healthier, I have baked them and shared shallow frying steps.
Ingredients
Potatoes: 2 large potatoes or three medium ones of any variety. I have used russet. You can also use leftover mashed potatoes. Spices: Red chile powder, garlic powder, and salt are all that I have added. You can use garam masala, curry powder, pepper powder, onion powder, or dried herbs like parsley or basil if needed. Garlic bread crumbs: To absorb the moisture, I have added bread crumbs. You can powder the poha or rusk (croutons) and add it to the recipe. Mozzarella cheese: Potato and cheese make the best combo, and kids love it. You can also add crumbled paneer or cheddar cheese instead. Panko bread crumbs: For the crispy exterior. Step-by-step instructions
Boil the potatoes
Peel the skin of potatoes, cut them into cubes, sprinkle water, and microwave for 5 minutes. I prefer this as it is quick. You can even pressure cook the potatoes or cook them in a pan, adding water till it becomes soft. If you have leftover mashed potatoes after the holiday, try this recipe. Add the cooked potato to a mixing bowl and mash it.
Make the patties dough.
Add red chile powder, garlic powder, jalapeno, garlic bread crumbs, mozzarella cheese, and salt to the mashed potato and mix until non-sticky dough is formed. Add extra bread crumbs if needed based on the moisture content in potatoes.
How to make patties or cutlets
Divide the dough into 8 or 10 equal portions. Shape them into a ball and gently flatten it. Add panko crumbs to one plate. In a small bowl, add corn flour and very little water and mix to form a medium batter. (thin for the light crust and thicker batter for the thicker crust) Dip each patty in corn flour paste and then coat it with bread crumbs by rolling it. Place this on a baking sheet.
Bake potato patties
Preheat the oven to 350 degrees F. Drizzle oil on each one of them and bake for about 12 to 15 minutes, flipping halfway through till they are golden in color, and broil it for the last 2 minutes if you want it to be crispier.
Cutlet in pan tawa or skillet.
Heat a tablespoon of oil on a pan for shallow frying, and place the patties. Do not overcrowd the pan. Fry them till they become golden brown and crispy on both sides. Add more oil or butter if desired.
Potato cutlet in air fryer
Place the patties in the air fryer and spray some oil. Bake at 350 degrees for 15 minutes. Serve potato cheese patties with green mint chutney, sweet tamarind dates chutney, or ketchup, and enjoy.
