Pancake Bites
I am sure you bake classic pumpkin pie atleast once during the Fall season and, especially for Thanksgiving dinner. What about those leftover pumpkin pie filling? Don’t let it go to waste. With this flavorful pie filling, you can make muffins, pudding, bread, cake, dips, scones, etc. Among them, pancake bites are our favorite.It is an ideal and simple breakfast recipe for Thanksgiving and Christmas morning. Serve pancake as it is, or drizzle some honey, maple syrup, a dollop of butter, nutella, or any nut butter of your choice.
Ingredients
To make these pancake bites or pumpkin pancakes, I have used leftover pie filling. Based on the consistency of the filling, I have added all-purpose flour and, to make it fluffy, a pinch of baking soda. Simple 3-ingredient pancake!
Step-by-step instructions
Pancake batter
In a large bowl, add leftover pie filling (approximately 2 cups). Depending on the thickness of your pie filling, add flour. So start with ½ cup, and you may add up to ¾ cup. Add baking soda and mix well.
How to cook mini pancake bites?
Heat a pan or griddle on medium-low heat and grease it with oil or butter if desired. You do not have to grease if using a nonstick griddle. Using a tablespoon measure, add in tablespoon of batter, around 7 to 9, depending on the size of your pan. Cook the pancakes on one side for about a minute till they get light browned, and then flip on another side and cook for 30 to 45 seconds. Serve it with honey, maple syrup, almond butter, peanut butter, or any of your favorite toppings and enjoy.
Tips
My pie filling was not too thick or thin. Depending on how thin your filling is, add flour and baking soda. I generally use a nonstick skillet to cook pancakes. If you are using any other, make sure you grease the pan. To avoid your pancake getting dark brown or burnt, always cook it on medium-low flame, especially if you have added sugar.
Pumpkin pancake variations
You can add nuts like walnuts, almonds, and pecans for additional crunch. Add vanilla extract for extra flavor. If serving for kids, add some chocolate chips.
