Oven-roasted Pumpkin

If you are looking for a light and filling dish different from potatoes or sweet potatoes to serve this Halloween, Thanksgiving, or Christmas, this is the right recipe! Roasted pumpkin can be sweet, savory, or spicy - easily adjustable to your cravings. This pumpkin recipe is vegan and gluten free. In this post, I have baked pumpkin wedges with skin on them and pumpkin cubes without skin. Both taste equally good. Serve it as a side with Thanksgiving turkey, roast pork, or whole-roasted chicken.

Ingredients

Pumpkin: Medium-sized sugar pumpkins, pie pumpkins, butternut squash, and spaghetti squash can be baked the same way. Garlic: For flavor. Red pepper flakes: For the heat. Italian seasoning: Compliments with Pumpkin. Oil: Olive oil or Coconut oil is preferred. Salt: to taste. Other ingredients: For a savory version, you can use herbs like thyme or rosemary and seasonings like paprika, black pepper, etc. If you like something sweet, try cinnamon and maple syrup. Step-by-step instructions

Preheat the oven to 200 degrees C or 400 degrees F. Line the baking tray with parchment paper and keep it aside.

How to cut the pumpkin?

Cut the pumpkin into half and scoop out the seeds. For the wedges: Cut the half portion of the pumpkin into wedges of the desired thickness. You do not have to peel the skin. Remove any flesh with a spoon. For cubes: Place the other cut side down and cut them into slices. Now peel it using a potato peeler or knife and further cut it into bite-size cubes.

How to roast pumpkin wedges?

Make the seasoning: Add garlic, Italian seasoning, pepper flakes, and salt and toss in a bowl. Place the wedges on a single layer on a baking sheet. Sprinkle the seasoning and drizzle oil. Bake for 30-35 minutes or until tender with caramelized edges.

Make the seasoning: Add garlic, Italian seasoning, pepper flakes, and salt to a bowl and mix. Add the pumpkin cubes and oil and toss until combined. Spread these pumpkin cubes on a single layer on a baking sheet. Roast this pumpkin cube for about 30 minutes or until the cubes are tender.

Serving suggestions

Serve roasted pumpkin wedges or cubes as a side for your holiday dinner with turkey, roast pork, or chicken. Toss this with greens, feta cheese, and nuts to make a classic pumpkin salad. Serve it with quinoa or a couscous bowl. You can even use it in tacos with avocados and black beans.
