I LOVE an easy Rocky Road recipe (Easter Rocky Road, Rolo Rocky Road, Malteser Rocky Road I’m looking at you 👀) but I just realised I’ve never shared a classic Rocky Road recipe. So here it is… my classic recipe that gets you perfect, crunchy, gooey, rich chocolate squares with just a few minutes of effort. Simply melt, mix and set.

⭐️ SUPER quick and easy method ⭐️ Can be modified for your favourite flavours ⭐️ Chocolatey indulgence for gifts or treats Some swear on fruit and nuts being involved, in some countries it’s a traybake (like here in the UK), whereas some see it as more of an ice cream flavour (like in the US). Meanwhile, in Australia, it is similar to ours but doesn’t tend to include biscuits. In this recipe, we’re going for the classic no bake tiffin style with biscuits for crunch, marshmallow for gooey squidginess and melted chocolate. The addition of golden syrup and butter, stops it from being to hard. I usually use a tin like this for my rocky roads or tray bakes. It measures 20cm x 20cm and gets the best thickness. You can use another size or shape but just be aware your squares might be thinner or thicker. Make sure you do this so you can get the Rocky Road out quicker and without breaking it. I use baking parchment or baking paper for almost everything I bake. No sticking, ever.
