Why We Love This Salmon Sheet Pan Dinner
Today’s Sweet Potato Crusted Salmon Sheet Pan Dinner is a wonderful healthy meal option that feeds up to six people. It takes very little time to make, and even less time to clean up. It’s low in carbs, and heavy on protein and veggies, and packed with good-for-you omega-3 fatty acids! I am obsessed with my healthy go-to recipes: dishes that are simple to prepare, with little cooking and clean-up time. That way, I can throw in new meals I want to try here and there, but have satisfying recipes to fill in on nights you are short on time and energy. This sheet pan dinner is one of those recipes that I always cook when I am busy and need something healthy and quick! As far as sheet pan salmon dinners go, this one is one of the most flavorful. The combination of the spicy Dijon and crispy sweet potato chips is a great complement to the richness of the Atlantic Salmon.
Ingredients You Need
Salmon Filets – fresh is best! Broccoli – Cut into bite-sized florets. Sweet Potato Chips – Smashed up into crumbs! Snap Peas – For a crunchy, fresh addition. Dijon Mustard – Acts as a binder between the salmon and the sweet potato chip crust! Honey – To caramelize the vegetables in the oven. Soy Sauce – To balance the flavors and add a savory flavor!
How to Make This Salmon Sheet Pan Dinner Recipe
Preheat the oven to 400 degrees F. Line a 18 x 13 inch rimmed baking sheet or any large rimmed baking sheet with parchment paper. Pour half the bag of sweet potato chips into a bowl and crush to crumbs. Place two tablespoons of dijon mustard, honey, and soy sauce in a small bowl. Whisk well. Then toss the sauce with the snap peas and broccoli. Cut the salmon into 6 pieces. Brush the tops of the salmon pieces with the remaining Dijon mustard. Sprinkle the tops with salt and pepper. Then press the tops into the crushed sweet potato chips. Place the salmon fillets, crust-side up, on the baking sheet. Arrange the snap peas and broccoli around the salmon and bake for 12-14 minutes, until the salmon is just cooked through. Serve warm and enjoy! When you finish off the Sweet Potato Crusted Salmon Sheet Pan Dinner, just throw away the parchment paper and wipe off the pan.
Tips & Tricks
Switch up the vegetables! I chose broccoli and snap peas, but really you can add any vegetables that you would like! Some great options would be baby potatoes, cauliflower, green beans, asparagus or zucchini! Change the protein! If you aren’t a fan of salmon, replace it with chicken or another fish like cod or halibut! Don’t over cook the salmon! Cooking time may vary depending on the thickness of the fish. Salmon is done cooking once it hits 145 F! Use a meat thermometer to check the internal temperature and ensure that it is done cooking.
