Slow Cooker Beef Brisket with Potatoes and Onions

When cooked properly, I think beef brisket is just about the most flavorful piece of meat you can enjoy. Using a slow cooker to do the cooking not only allows you to be hands-off: it helps to ensure that the brisket is thoroughly cooked, and is therefore superbly tender and perfectly juicy. The meat is heavily seasoned with a sweet and smoky spice blend before being placed on a hearty layer of potatoes, mushrooms, and sautéed onions. While all together in the slow cooker, the veggies and brisket both become incredibly savory. Can’t you just imagine how divine your house will smell after this crock pot beef brisket has been cooking all day?!

How to Make the Best Beef Brisket in the Slow Cooker

The first step to making our incredibly juicy, melt-in-your-mouth Beef Brisket with Potatoes and Onions is to prepare the veggies.

  1. In a skillet on medium high heat, sauté the onions while you cut up the mushrooms and potatoes.
  2. Place sliced potatoes in the bottom of the slow cooker crock, add mushrooms and sautéed onions, and drizzle with red wine vinegar.
  3. To prepare the beef brisket, first massage all over with beef paste to coat. Then, in a small bowl combine the brown sugar, smoked paprika, salt, pepper, garlic powder and onion powder. Note: If you’re using powdered beef bouillon rather than paste, add the powder to this seasoning mix.
  4. Sprinkle and rub the mixture on both sides of the beef brisket.
  5. Lay the seasoned brisket on top of the prepared veggies in the slow cooker. Cover and cook on HIGH for 6-7 hours, or on LOW for 11-13 hours. When ready to enjoy, transfer the cooked brisket to a sturdy cutting board. Cut into thin strips, going against the grain and at a slight angle. Place the potatoes, onions, and mushrooms on a serving platter, and arrange the slices of brisket on top. Garnish with parsley if you wish, and serve warm.

How Do I Avoid a Tough Brisket?

I know many people tend to avoid cooking beef brisket because of that one time they had it and the meat was tough and/or dried out. The key to truly tender beef is to make sure the meat is well-cooked, and so it’s best to leave alone in the slow cooker for as long as you can without overcooking. Our crock pot beef brisket recipe calls for 6-7 hours on high or 11-13 hours on low, and either of these settings should yield a perfectly juicy brisket.

What Other Dishes Do You Suggest Serving?
