Mung bean sprouts stir fry
Mung bean is called pachai payaru in Tamil, Hesaru kaalu in Kannada, green gram in English, and moong in Konkani. Stir fry is called usli in Konkani, Marathi, and sundal in Tamil and Telugu. Mung bean sprouts stir fry is a protein-packed recipe for a weight loss diet. You need basic tempering ingredients to make this recipe. Pachai payaru sundal (hesaru kaalu usli) is a no-onion no-garlic recipe. Thus, you can also serve it for prasadam, naivedyam, or any meal during fasting, upvas, and vrat days. Ingredients
Sprouted green gram: You can use homemade mung bean sprouts or storebought. Use coconut oil, mustard seeds, curry leaves, urad dal, and red chile for tempering. Other ingredients: Salt, hing, and grated coconut. Check out the recipe card for the full list of ingredients.
Step-by-step instructions
In a pan on medium flame, heat oil. Add mustard seeds. WHen they splutter, add urad dal, curry leaves, and red chile and saute until urad dal becomes golden in color. Add sprouted moong bean, green chilies, salt and water and mix. Cover and cook on a medium flame for 5 minutes.
Open the lid and mix well. Cover and cook for another 5 minutes. The cooking time varies depending on the texture you love for sprouted moong. For a slightly crisp texture, the total cooking time is 10 minutes; for a softer texture, cook for 20 minutes with a little extra water. Add hing and coconut and mix well. Switch off the flame.
Tips
You can cook this in a pressure cooker for 1 whistle instead of cooking in the pan. This will give it a nice creamy texture. Feel free to add cubes of potatoes or raw banana (kele) if needed. Sundal or usli is a very flexible recipe that allows you to adjust all ingredients to your liking.
How to sprout green moong?
Wash and soak 1 cup of green gram or moong in 3 to 4 cups of water overnight for 8 to 12 hours. Drain and rinse with water. Transfer this to a wide pan, cover it, and rest it for one day in a dark place so the sprouts grow. Alternatively, you can also tie in a thin, wet cloth.
