Homemade popsicles are always the best as they are made using natural ingredients, no preservatives or artificial dyes. The recipe is flexible. You can reduce the sweetness to your liking and add fresh herbs like mint for flavor. This strawberry popsicle is vegan, gluten-free, dairy-free, and eggless too.

Ingredients

Strawberries: Use fresh and ripe seasonal strawberries to make this popsicle.  Sugar: To sweeten the popsicle, you can use any sweetener, sugar, honey, or agave nectar. Also, it prevents the formation of ice crystals.  Lemon juice: This will enhance the berries’ flavor and preserves that beautiful red color. If you do not want to use lemon, use any citrus fruit juice like orange or lime.  See the recipe card below for a full list of ingredients and measurements.

How to make Popsicles?

Remove the stem and wash the strawberries. Slice around eight strawberries into small chunks to fit into your mold, and place them in a separate bowl. Sprinkle 1 tablespoon of sugar on these strawberry chunks, toss, and keep it aside for 15 minutes to release the juices from the fruit. Add remaining strawberries, 3 tablespoon of sugar, and lemon juice with very little water to blend until smooth. (Check the taste and adjust the lemon juice and sugar. You can also add a pinch of salt if needed). You can roughly chop the strawberries before adding them to the blender to ease the blending process. Add sweetened strawberry chunks into each popsicle mold, then pour in the puree. Leave a little place on the top of your popsicle mold. Insert the wooden sticks. Place the popsicle molds in the freezer for at least 4 hours or overnight. To unmold, run the bottom of the popsicle mold under warm water for 5 seconds and pull out the popsicles.

Tips

Taste the strawberry puree before adding to the mold. The amount of sugar and lemon juice you may need may vary depending on the sweetness of your fruit. They should be slightly sweeter before they go into the freezer because once frozen, it tends to cut into the sweetness and also flavor. To make strawberry yogurt popsicles or creamy, add yogurt or coconut milk while blending. You can also make these popsicles with fruits like mango, kiwi, other summer berries, or peaches.

Storage

Popsicles can be stored in the mold or unmolded, wrapped in a nonstick material like parchment paper, plastic wrap, or wax paper, and stored in a freezer bag or container. Homemade popsicles will last in the freezer for up to two months.
