Sometimes I want to serve up a vegetarian family meal sharing plate that doesn’t involve lots of time and effort, and this Veggie Loaded Nachos recipe is perfect for those days when corners just have to be cut. Layer it up, grill for 5 minutes and you are good to go. Is it the most nutritious meal you’ll ever make? Probably not. But is it quick, tasty and includes a couple of portions of veg? YES!
✅ Nacho deliciousness in 10 minutes flat ✅ Oozy, melted cheese ✅ Family favourite Yes, you can add beef mince or pieces of chicken. Fry it with some taco seasoning, which will give you the flavour you’re after. I top the nachos with some lettuce, salsa, guacamole and serve with lime wedges. If you’re using this as a side dish or starter, you could serve it before something like my Slow Cooker Pork Carnitas for guests, or alongside my Easy Chilli Con Carne recipe. Use whichever grated cheese you prefer. Cheddar cheese is great for flavour. Mozzarella is good for the melted satisfying cheeeesy pull!
