I created this recipe for the 2022 Queen’s Platinum Jubilee, when I wanted to serve something special but didn’t want to be in the kitchen all weekend. I wanted to be out enjoying myself to celebrate Her Majesty reaching 70 years on the throne! My aim was to come up with an easy, delicious but wow-factor dessert that everyone could whip up quickly and serve at their street parties, garden parties, picnics or Bank Holiday gatherings, without having to do mountains of prep or baking. So here it is – in just seven ingredients, the cheat’s Very British Lemon Cheesecake Tart. A full-on shortcut pudding but also an all-out patriotic tribute. God save the the Lemon Cheesecake Tart! ✅ Homemade and impressive ✅ Delicious and super easy ✅ A summery crowd-pleaser I used a 24cm loose bottom tart tin. This means that you can easily push the tart out of the tin from the bottom when it is set. (Stand the thin on a can of baked beans, push down and the sides will come away.) Also, extra lazy trick, don’t bother to remove the bottom of the tin, just sit it on top of a plate. ⭐️ If you don’t like or can’t get hold of raspberries, you could use strawberries for the red part of the Union Jack. ⭐️ The amount of berries you’ll need will depend on the surface area of your cheesecake, so make sure you have enough if your dish is wider! This isn’t a super firm tart as we are using some shortcuts here, but as long as you’re careful to serve it straight from the fridge, it should be firm enough to slice and lift out. If you really want it to be firmer, you can freeze the base alone for an hour before you finish it off.
