This is the 6th weekly family meal plan I will be sharing on Instagram, Facebook and TikTok, and so many of you asked for all of the info in one place, so here it is. Watch out for the videos of each recipe coming each night this week, so you can cook along. For reference, I shopped for this Meal Plan in May 2022 at Aldi and it cost £32.57.

Why use a weekly food planner?

⭐️ Knowing exactly what food to buy for avoids food waste, saving you money. ⭐️ Having a plan for dinner avoids the mental load of “what’s for dinner?” question every night. The printable shopping list can be found here. ➡️ Remove ingredients for any meals that you don’t want to cook. ➡️ The shopping list includes the cheapest version of each ingredient. Obviously if you want to buy lower fat mince or free range etc, that’s personal choice. ➡️ All of the recipes are to serve 4, so if you’re cooking for 2, simply halve the ingredients. ⭐️ For the cheese you can use 75g of cheddar from your shopping list as a substitution OR add a ball of buffalo mozzarella to your shopping (there are notes in the recipe). ⭐️ Serve with baked potatoes and chopped salad (lettuce, 1/3 cucumber and 1 pepper – dress with some olive oil/balsamic vinegar/dressing whatever you like to serve on salad). ⭐️ Reserve the leftover passata for the beef enchiladas recipe later in the week. Dinner 2 ⭐️ Served with homemade chips, peas and a yoghurt and cucumber dip. ⭐️ Annoyingly, Aldi don’t sell breadcrumbs right now. You can either buy them elsewhere or you can make your own. Make your own by putting stale bread into a food processor or grating it. You can freeze it first to make it easier. ⭐️ To make the dip: mix 2/3 cucumber cut into tiny chunks, with 250g yoghurt and the juice of 1/2 a lemon (add more to taste). ⭐️ I used the small tortillas from Aldi, but you could use large ones if you want a neater enchilada wrap! ⭐️ Use the partial carton of passata that you saved from earlier in the week (along with another full one). ⭐️ Serve with a dollop of the yoghurt. Dinner 4 ⭐️ Use 200g of cream cheese rather than 250g in the recipe, as that’s the size of the Aldi packs. ⭐️ Use the peas from your shopping rather than petit pois in the recipe. ⭐️ Replace the parmesan in the recipe with 75g cheddar from the shopping list. (What can I say, I LIKE IT CHEESY!) ⭐️ This recipe actually serves 6, so you will end up with 2 extra portions for lunch or to freeze for later. ⭐️ Serve with boiled rice.
