Do I dare to call them healthy? Some people say deep-fried foods don’t have any business in a healthy diet, but sometimes we have to eat what we love in moderation so we don’t feel deprived. It’s not entirely healthy, but some of the banana and whole wheat flour’s health benefits make me feel much better about indulging. Accra bananas are a popular snack and breakfast food in most West African countries. In this recipe, bananas are mashed and mixed with whole wheat flour and brown sugar, then flavored with nutmeg and vanilla and fried until golden brown. How to Make Whole Wheat Accra Banana Fritters

Mash bananas with a fork or puree them in a food processor or blender. Mix – In a medium bowl, mix the mashed bananas, whole wheat flour, sugar, baking powder, and salt. Mix well to the consistency of a creamy batter. Flavor – Finally, stir in the nutmeg and vanilla and let it rest for 10 minutes. Heat a large cast iron skillet with up to ½ an inch of oil over medium-high heat (375℉/190℃) until hot but not smoking. Fry – Scoop the batter and gently place it in the hot oil. Turn once and fry until golden brown, about 5 minutes. Fry your accra in batches so you don’t overcrowd the pan (the fritters may become soggy by absorbing excess oil). Drain – Remove the fritters from the skillet with a slotted spoon, letting excess oil drain back into the skillet. Place them on paper towels. Serve warm.
